British Beef and Mushroom Stew
A hearty and comforting beef stew with tender chunks of beef, mushrooms, and a rich broth, perfect for family dinners.
Ingredients
- 1 kg beef chuck, cut into 2-inch pieces
- 250 g mushrooms, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 500 ml beef stock
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 200 g frozen peas
Method
- Heat olive oil in a large pot over medium heat.
- Season the beef pieces with salt and pepper, then add to the pot and brown on all sides.
- Remove the beef and set aside. In the same pot, add chopped onion and cook until softened.
- Add minced garlic and sliced mushrooms, cooking until mushrooms are tender.
- Stir in the tomato paste, Worcestershire sauce, and dried thyme, cooking for another minute.
- Return the beef to the pot and add the beef stock and bay leaves.
- Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 hr, stirring occasionally.
- Add frozen peas in the last 10 min of cooking.
- Remove bay leaves before serving.
