Spicy Chickpea and Cowboy Beans Curry

A hearty and flavorful Indian-inspired dish featuring chickpeas and cowboy beans, simmered in a rich, spiced tomato sauce, and served with rice.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can cowboy beans, drained and rinsed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • Fresh cilantro for garnish
  • Cooked rice for serving

Method

  1. Heat olive oil in a large pan over medium heat.
  2. Add cumin seeds and sauté until they start to sizzle.
  3. Add chopped onion and cook until translucent.
  4. Stir in minced garlic and grated ginger; cook for an additional minute.
  5. Add diced tomatoes and cook for 5-7 min until the mixture thickens.
  6. Stir in coriander powder, garam masala, turmeric powder, chili powder, and salt.
  7. Add chickpeas and cowboy beans to the pan; mix well.
  8. Pour in a little water if needed to adjust the consistency, and let it simmer for 10-15 min.
  9. Taste and adjust seasoning if necessary.
  10. Serve hot over cooked rice, garnished with fresh cilantro.
