Spicy Chickpea and Cowboy Beans Curry
A hearty and flavorful Indian-inspired dish featuring chickpeas and cowboy beans, simmered in a rich, spiced tomato sauce, and served with rice.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 can cowboy beans, drained and rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder (adjust to taste)
- Salt to taste
- Fresh cilantro for garnish
- Cooked rice for serving
Method
- Heat olive oil in a large pan over medium heat.
- Add cumin seeds and sauté until they start to sizzle.
- Add chopped onion and cook until translucent.
- Stir in minced garlic and grated ginger; cook for an additional minute.
- Add diced tomatoes and cook for 5-7 min until the mixture thickens.
- Stir in coriander powder, garam masala, turmeric powder, chili powder, and salt.
- Add chickpeas and cowboy beans to the pan; mix well.
- Pour in a little water if needed to adjust the consistency, and let it simmer for 10-15 min.
- Taste and adjust seasoning if necessary.
- Serve hot over cooked rice, garnished with fresh cilantro.
