Crispy Baked Cod with Herbed Potato Wedges
Deliciously crispy baked cod fillets served alongside herbed potato wedges and a fresh green salad, perfect for a family meal.
Ingredients
- 4 cod fillets (about 150g each)
- 200g breadcrumbs
- 50g grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 800g potatoes, cut into wedges
- 1 tablespoon dried mixed herbs (such as oregano, thyme, and rosemary)
- 1 tablespoon fresh parsley, chopped
- 200g mixed salad greens
- 1 cucumber, sliced
- 1 red bell pepper, sliced
- Lemon wedges for serving
Method
- Preheat the oven to 200°C (390°F).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Drizzle olive oil over the cod fillets and then coat each fillet with the breadcrumb mixture.
- Place the coated cod on a baking tray lined with parchment paper.
- In a separate bowl, toss the potato wedges with olive oil, dried mixed herbs, salt, and pepper. Spread them out on another baking tray.
- Bake both the cod and potato wedges in the oven for about 25-30 min or until the cod is cooked through and the potato wedges are golden and crispy.
- While the cod and potatoes are baking, prepare the salad by mixing salad greens, cucumber, and red bell pepper in a bowl.
- Serve the crispy cod with herbed potato wedges, salad, and lemon wedges on the side.
