Lemon Herb Grilled Salmon with Vegetable Quinoa Salad
A zesty grilled salmon dish served alongside a refreshing vegetable quinoa salad, perfect for a healthy family meal.
Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 200g quinoa
- 1 cucumber, diced
- 1 red bell pepper, diced
- 100g cherry or grape potatoes, halved
- 1 small red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
Method
- In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add the salmon fillets and marinate for at least 15 min.
- Rinse the quinoa under cold water and cook according to package instructions, usually about 15 min, until fluffy.
- While the quinoa is cooking, heat a grill or grill pan over medium-high heat. Grill the marinated salmon for about 5-7 min on each side or until cooked through.
- In a large bowl, combine cooked quinoa, diced cucumber, red bell pepper, halved cherry potatoes, red onion, and parsley. Drizzle with a little olive oil and mix well.
- Serve the grilled salmon on a bed of quinoa salad.
