Teriyaki Tofu and Vegetable Wraps
Delicious wraps filled with marinated tofu, crisp vegetables, and a sweet teriyaki sauce, perfect for a family meal.
Ingredients
- 300g firm tofu, drained and pressed
- 2 tablespoons soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 100g cucumber, sliced
- 4 large whole wheat wraps
- Sesame seeds for garnish
- Fresh coriander for garnish
Method
- Cut the tofu into thin strips and toss with soy sauce, honey or maple syrup, rice vinegar, grated ginger, and cornstarch. Let marinate for 10 min.
- Heat the vegetable oil in a frying pan over medium heat. Add the marinated tofu and cook until golden brown and crispy, about 5-7 min, turning occasionally.
- Add the bell pepper and carrot to the pan and stir-fry for another 3-4 min until the vegetables are tender but still crisp.
- Warm the whole wheat wraps in a separate pan for about 30 seconds on each side.
- Assemble the wraps by placing the cooked tofu and vegetable mixture in the center of each wrap. Top with sliced cucumber and sprinkle with sesame seeds and fresh coriander.
- Roll up the wraps tightly, slice in half, and serve immediately.
