Mango Coconut Lassi Popsicles
A refreshing Indian-inspired dessert made with ripe mangoes and coconut milk, perfect for cooling down on a warm day. These popsicles are easy to make and loved by kids and adults alike.
Ingredients
- 2 ripe mangoes, peeled and diced
- 1 cup coconut milk
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 tablespoon lime juice
- 1/2 teaspoon cardamom powder (optional)
- Pinch of salt
Method
- In a blender, combine the diced mangoes, coconut milk, honey or maple syrup, lime juice, cardamom powder, and salt.
- Blend until smooth and creamy.
- Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks into the molds and freeze for at least 4-6 hr or until completely solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.
Notes
- You can substitute the mango with other fruits like strawberries or peaches if desired.
- For added texture, consider mixing in some shredded coconut before pouring into molds.
