Vegetable Stir-Fry with Tofu

A colorful and nutritious vegetable stir-fry featuring crispy tofu, packed with flavors and easy to prepare, perfect for the family dinner.

Ingredients

  • 14 oz firm tofu, drained and pressed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 green onions, chopped
  • Sesame seeds for garnish

Method

  1. Cut the tofu into cubes and marinate in soy sauce for 10 min.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add the marinated tofu and cook until golden brown on all sides, about 5-7 min.
  4. Remove the tofu from the skillet and set aside.
  5. In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.
  6. Add bell pepper, zucchini, broccoli, and snap peas, stir-frying for 5-7 min until vegetables are tender-crisp.
  7. Return the tofu to the skillet and mix well with the vegetables.
  8. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Feel free to substitute any of the vegetables based on preference or availability.
