Italian Herb Chicken with Roasted Vegetables
A flavorful Italian dish featuring herb-marinated chicken served alongside a colorful array of roasted vegetables, perfect for a family meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 bell pepper (any color), chopped
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, cut into wedges
- 1 teaspoon balsamic vinegar
- Fresh basil for garnish
Method
- Preheat the oven to 400°F (200°C).
- In a bowl, combine olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix well.
- Add the chicken breasts to the bowl and coat them evenly with the herb mixture. Let them marinate for 10 min.
- On a large baking sheet, arrange the chopped vegetables (bell pepper, zucchini, yellow squash, and red onion). Drizzle with balsamic vinegar, salt, and pepper. Toss to combine.
- Place the marinated chicken breasts on the baking sheet with the vegetables.
- Bake in the preheated oven for 25-30 min, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let the chicken rest for a few minutes before slicing.
- Serve the chicken with the roasted vegetables and garnish with fresh basil.
