Ingredients:
300g pasta (penne or fusilli works well)
400g chicken breast, diced
1 onion, finely chopped
2 cloves of garlic, minced
200g cherry tomatoes, halved
200ml double cream
100g grated cheese (cheddar or mozzarella)
2 tablespoons olive oil
Salt and pepper, to taste
Optional: Fresh basil or parsley for garnish
Instructions:
1. Preheat the oven: Preheat your oven to 180°C (350°F).
2. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
3. Cook the chicken: In a large frying pan, heat the olive oil over medium heat. Add the diced chicken and cook for about 5-7 minutes until browned and cooked through. Season with salt and pepper.
4. Sauté the vegetables: Add the chopped onion and minced garlic to the pan with the chicken. Cook for an additional 3-4 minutes until the onion is softened.
5. Combine ingredients: Stir in the cherry tomatoes and cook for another 2 minutes. Then, pour in the double cream and mix well. Allow to simmer for a couple of minutes, letting the mixture thicken slightly.
6. Mix pasta and chicken: In a large mixing bowl, combine the cooked pasta and the creamy chicken mixture. Stir until the pasta is thoroughly coated.
7. Prepare for baking: Transfer the pasta mixture into a greased baking dish. Sprinkle the grated cheese evenly over the top.
8. Bake: Place the dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
