Crispy Vegetable Spring Rolls

These delightful crispy vegetable spring rolls are bursting with flavour and perfect for sharing with the whole family!
#### Ingredients:
– 10 spring roll wrappers
– 1 cup shredded cabbage
– 1 cup grated carrots
– ½ cup sliced bell peppers (any colour)
– ½ cup bean sprouts
– 1 garlic clove, minced
– 1 teaspoon fresh ginger, grated
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 tablespoon cornflour (cornstarch)
– Cooking oil for frying
– Sweet chili sauce (for serving)
#### Instructions:
1. Prepare the Filling: In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced bell peppers, bean sprouts, minced garlic, and grated ginger. Toss them together until well mixed.
2. Season the Mixture: Stir in the soy sauce and sesame oil, blending thoroughly to ensure all the vegetables are coated with the seasoning.
3. Thicken the Filling: Sprinkle the cornflour over the vegetable mixture and mix until the cornflour is evenly distributed, which will help bind the filling.
4. Wrap the Spring Rolls: Place a spring roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the centre of the wrapper. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly away from you. Seal the edge with a dab of water. Repeat until all the filling is used.
5. Heat the Oil: In a deep frying pan or wok, heat enough cooking oil over medium heat for shallow frying. To test if it’s ready, drop in a small piece of bread; if it sizzles, it’s hot enough!
6. Fry the Spring Rolls: Carefully add the spring rolls to the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them and drain on kitchen paper.
7. Serve: Arrange your crispy vegetable spring rolls on a serving platter and accompany them with sweet chili sauce for dipping.
