Creamy Chicken Pasta Bake

Ingredients:
300g penne pasta
2 chicken breasts, diced
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
200g broccoli florets (fresh or frozen)
300ml double cream
100g grated cheddar cheese
50g grated Parmesan cheese
Salt and pepper, to taste
1 teaspoon dried mixed herbs (optional)
Instructions:
1. Preheat the Oven: Preheat your oven to 180°C (350°F).
2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the packet instructions until al dente. Drain and set aside.
3. Sauté the Chicken: In a large frying pan, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove it from the pan and set aside.
4. Cook the Vegetables: In the same pan, add the chopped onion, and garlic, and sauté for 2-3 minutes until softened. Then add the diced red bell pepper and broccoli florets, cooking for another 5 minutes until they are tender.
5. Combine Ingredients: Return the cooked chicken to the pan with the vegetables. Add the cooked pasta, double cream, half of the cheddar cheese, and the mixed herbs (if using). Stir until everything is well combined and heated through.
6. Transfer to Baking Dish: Pour the creamy chicken and pasta mixture into a greased baking dish.
7. Add Toppings: Sprinkle the remaining cheddar cheese and the Parmesan cheese evenly over the top.
8. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and golden.
9. Serve: Remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious creamy chicken pasta bake with a side salad or garlic bread!
Tips:
Feel free to add other vegetables such as mushrooms or spinach to the dish for extra nutrition.
