Coconut Vegetable Stir-Fry with Couscous
A flavorful Italian-inspired stir-fry featuring a mix of fresh vegetables, enhanced by a coconut base, served with fluffy couscous. This dish is vibrant and full of textures, perfect for a family meal.
Ingredients
- 200g couscous
- 400ml vegetable broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 200ml coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Fresh basil for garnish
Method
- In a pot, bring the vegetable broth to a boil and stir in the couscous. Remove from heat, cover, and let it sit for 5 min.
- In a large pan or wok, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
- Add the sliced bell peppers, zucchini, broccoli, and snap peas to the pan. Stir-fry for about 5-7 min until the vegetables are tender-crisp.
- Pour in the coconut milk and soy sauce, stirring well to combine. Simmer for an additional 5 min, allowing the sauce to thicken slightly.
- Fluff the couscous with a fork and portion it onto plates. Top with the coconut vegetable stir-fry and garnish with fresh basil.
- Serve immediately.
