Paprika-Spiced Vegetable & Hummus Wraps
Deliciously spiced wraps filled with a variety of roasted vegetables and creamy hummus, perfect for a light meal or snack.
Ingredients
- 4 large whole wheat wraps
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 courgette, sliced
- 1 aubergine, diced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 200g hummus
- Fresh spinach leaves, for filling
Method
- Preheat the oven to 200°C.
- In a large bowl, combine the sliced red and yellow bell peppers, courgette, and diced aubergine.
- Drizzle with olive oil, smoked paprika, salt, and pepper. Toss until the vegetables are well coated.
- Spread the vegetables on a baking tray lined with parchment paper and roast for 20-25 min, or until tender.
- Warm the whole wheat wraps in a dry skillet for 1-2 min on each side.
- Spread hummus evenly over each wrap, leaving some space around the edges.
- Add a handful of fresh spinach and then top with the roasted vegetables.
- Roll the wraps tightly, slice in half, and serve.
