Vegetable Stir-Fry with Tofu
A colorful and nutritious vegetable stir-fry featuring crispy tofu, perfect for a quick and healthy meal.
Ingredients
- 1 block firm tofu, pressed and cubed
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Method
- Press the tofu to remove excess moisture, then cut it into cubes.
- In a bowl, marinate the tofu with soy sauce for about 10 min.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the tofu cubes and cook until golden brown, about 5-7 min, flipping occasionally.
- Remove the tofu from the skillet and set aside.
- In the same skillet, add the garlic and ginger, sauté for about 30 seconds until fragrant.
- Add the bell pepper, broccoli, carrot, and snap peas to the skillet. Stir-fry for about 5 min until the vegetables are tender but still crisp.
- Return the tofu to the skillet, mix well, and cook for an additional 2 min.
- Sprinkle with sesame seeds, salt, and pepper before serving.
Notes
- Serve over rice or noodles for a complete meal.
