Grilled Lemon Herb Chicken
A light and flavorful grilled chicken dish marinated in a zesty lemon herb mixture, perfect for a healthy meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Method
- In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken.
- Seal the bag or cover the dish and refrigerate for at least 30 min, or up to 2 hr.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 min on each side, or until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 min before slicing.
- Serve with a fresh salad or your favorite side dish.
