Lemon Herb Grilled Chicken
A refreshing and zesty grilled chicken dish, perfect for a light meal packed with flavor.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 lemons, juiced
- 3 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
Method
- In a bowl, whisk together olive oil, lemon juice, garlic, thyme, rosemary, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, ensuring it is well coated.
- Seal the bag or cover the dish and refrigerate for at least 30 min, or up to 4 hr for more flavor.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and discard the marinade.
- Grill the chicken for 6-8 min on each side, or until the internal temperature reaches 165°F.
- Remove from the grill and let rest for 5 min before serving.
