#### Ingredients:
– 500g boneless chicken breast, cut into bite-sized pieces
– 2 tablespoons vegetable oil
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 medium onion, diced
– 2 cloves garlic, minced
– 300g fresh pineapple chunks (or canned if preferred)
– 2 tablespoons soy sauce
– 4 tablespoons sweet and sour sauce (store-bought)
– 1 tablespoon cornstarch
– 100ml chicken stock
– Salt and pepper, to taste
– Cooked rice, to serve
– Spring onions and sesame seeds for garnish (optional)
#### Instructions:
1. Marinate the Chicken: In a bowl, toss the chicken pieces with soy sauce and cornstarch. Let it marinate for about 10 minutes while you prepare the veggies.
2. Heat the Oil: In a large pan or wok, heat the vegetable oil over medium-high heat.
3. Cook the Chicken: Once the oil is hot, add the marinated chicken to the pan. Stir-fry for about 5-7 minutes until the chicken is cooked through and golden brown. Remove the chicken from the pan and set aside.
4. Sauté the Vegetables: In the same pan, add the diced onion and minced garlic. Sauté for 2 minutes until fragrant, then add the sliced bell peppers and pineapple chunks. Cook for an additional 3-4 minutes until the veggies are tender yet crisp.
5. Combine and Add Sauce: Return the cooked chicken to the pan. Pour in the sweet and sour sauce and chicken stock, stirring well to combine everything. Allow it to simmer for another 5 minutes, letting the sauce thicken slightly.
