Vegetable Stir-Fry with Tofu
A vibrant and healthy vegetable stir-fry featuring colorful vegetables and tofu, tossed in a savory sauce. This dish is perfect for a quick family meal and is packed with nutrients.
Ingredients
- 14 oz firm tofu, drained and pressed
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 green onions, chopped
- Salt and pepper to taste
- Cooked rice or quinoa for serving
Method
- Cut the pressed tofu into cubes and marinate in soy sauce for 10 min.
- Heat sesame oil in a large pan over medium heat.
- Add the marinated tofu to the pan and cook until golden brown on all sides, about 5-7 min.
- Add garlic and ginger to the pan and sauté for 1 minute until fragrant.
- Add the sliced bell peppers, broccoli, and carrot to the pan and stir-fry for 3-5 min until vegetables are tender-crisp.
- Season with salt and pepper to taste.
- Remove from heat and stir in chopped green onions.
- Serve the stir-fry over cooked rice or quinoa.
Notes
- Feel free to add any other vegetables you have on hand.
- This dish can be made in advance and reheated.
