Vegetable Lasagna
A hearty and flavorful vegetable lasagna made with layers of fresh vegetables, ricotta cheese, marinara sauce, and mozzarella, perfect for a family dinner.
Ingredients
- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 3 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup spinach
- 1 cup mushrooms, sliced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Method
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions, then drain and set aside.
- In a skillet, heat a little olive oil over medium heat. Sauté the zucchini, bell pepper, mushrooms, and spinach until tender, about 5-7 min. Season with Italian seasoning, salt, and pepper. Remove from heat.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer 3 lasagna noodles over the sauce, followed by half of the ricotta cheese, half of the sautéed vegetables, and a third of the mozzarella cheese. Add another layer of sauce.
- Repeat the layering process with the remaining noodles, ricotta, vegetables, sauce, and top with the remaining mozzarella cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 min.
- Remove the foil and bake for an additional 20 min or until the cheese is bubbling and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add or substitute any vegetables based on preference.
- This dish can be made ahead of time and refrigerated before baking.
