Spinach and Cheese Stuffed Shells
Large pasta shells filled with a creamy spinach and cheese mixture, baked in marinara sauce.
Ingredients
- 12 jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups marinara sauce
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Method
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- In a large mixing bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese, chopped spinach, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Spread 1 cup of marinara sauce on the bottom of a baking dish.
- Stuff each cooked pasta shell with the cheese and spinach mixture and place them in the baking dish.
- Top the stuffed shells with the remaining marinara sauce, then sprinkle the remaining mozzarella and Parmesan cheese over the top.
- Cover the dish with aluminum foil and bake for 20 min.
- Remove the foil and bake for an additional 10 min, or until the cheese is bubbly and golden.
- Garnish with fresh basil if desired and serve hot.
Notes
- You can add more vegetables like mushrooms or bell peppers if desired.
- This dish can be made ahead of time and stored in the refrigerator before baking.
