Ingredients:
For the Pakoras:
– 200g gram flour (besan)
– 1 tsp ground cumin
– 1 tsp ground coriander
– 1 tsp turmeric powder
– 1/2 tsp red chilli powder (adjust to taste)
– 1/2 tsp baking powder
– 1/2 tsp salt (or to taste)
– 150ml cold water
– 1 medium onion, thinly sliced
– 1 medium potato, peeled and thinly sliced
– 1 medium carrot, grated
– 100g spinach, roughly chopped
– 2-3 green chillies, finely chopped (optional)
– Fresh coriander leaves, chopped (for garnish)
For the Dipping Sauce:
– 150g plain yogurt
– 1 tbsp mint sauce
– 1/2 tsp cumin powder
– Salt to taste
For Frying:
– Vegetable oil (for deep frying)

Instructions:
1. Prepare the Batter:
In a large mixing bowl, combine gram flour, ground cumin, ground coriander, turmeric, red chilli powder, baking powder, and salt. Gradually add cold water while whisking until you have a smooth batter that coats the back of a spoon.
2. Add Vegetables:
Stir in the sliced onions, potato, grated carrot, spinach, and green chillies (if using) into the batter. Ensure all the vegetables are evenly coated.
3. Heat the Oil:
In a deep saucepan or wok, heat enough vegetable oil to fully submerge the pakoras over medium heat. To test if the oil is ready, drop a small spoonful of the batter into the oil; it should sizzle and rise to the surface.
4. Fry the Pakoras:
Using a spoon or your hands, carefully drop spoonfuls of the vegetable batter mixture into the hot oil. Fry the pakoras in batches, making sure not to overcrowd the pan. Cook for about 4-5 minutes or until they are golden brown and crispy, turning occasionally.
5. Drain Excess Oil:
Once cooked, remove the pakoras using a slotted spoon and place them on a plate lined with kitchen paper to absorb any excess oil. Repeat with the remaining batter.
6. Prepare the Dipping Sauce:
In a small bowl, mix together the yogurt, mint sauce, cumin powder, and salt. Adjust seasoning to taste.
7. Serve:
Serve the hot pakoras on a platter, garnished with fresh coriander leaves, along with the yogurt dipping sauce. Enjoy your delightful starter with family and friends!
