Prawn and Cucumber Salad
A refreshing Chinese-style starter featuring succulent prawns and crunchy cucumbers, tossed in a light sesame dressing.
Ingredients
- 200g cooked prawns, peeled and deveined
- 1 cucumber, thinly sliced
- 2 green onions, finely chopped
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Method
- In a large bowl, combine the cooked prawns, cucumber, and green onions.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and sugar until well combined.
- Pour the dressing over the prawn mixture and toss gently to coat.
- Season with salt and pepper to taste.
- Transfer to a serving dish and sprinkle with sesame seeds if using.
- Serve chilled or at room temperature.
Notes
- For an extra crunch, feel free to add sliced bell peppers or radishes.
- Make sure to use pre-cooked prawns to save time.
