Mediterranean Quinoa Salad
A refreshing and nutritious salad featuring quinoa, fresh vegetables, and a tangy lemon dressing.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Method
- Rinse the quinoa under cold water to remove any bitterness.
- In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for about 15 min until water is absorbed.
- Remove from heat and let sit for 5 min, then fluff with a fork.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese if using.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooked quinoa to the vegetable mixture and pour the dressing over. Toss to combine.
- Serve chilled or at room temperature.
Notes
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
