Leftover Chicken Tikka Masala
A flavorful Indian dish made with leftover chicken, simmered in a spiced tomato-based sauce, perfect for the whole family.
Ingredients
- 2 cups leftover cooked chicken, shredded
- 1 tablespoon vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch piece ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon garam masala
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt to taste
- 1 cup coconut milk
- Fresh cilantro for garnish
Method
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 min until fragrant.
- Add the diced tomatoes and tomato paste to the skillet, stirring well.
- Season with garam masala, cumin, paprika, turmeric, and salt. Cook for about 5 min, allowing the spices to bloom.
- Add the shredded chicken and coconut milk, mixing everything together.
- Bring to a gentle simmer and let cook for 15-20 min, stirring occasionally.
- Adjust seasoning if needed and remove from heat.
- Garnish with fresh cilantro before serving.
