Italian Herb Chicken with Pasta
A flavorful and comforting dish featuring tender chicken breast seasoned with Italian herbs, served over a bed of pasta with a light olive oil and garlic sauce.
Ingredients
- 6 boneless, skinless chicken breasts
- 2 cups penne pasta
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
Method
- Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, season chicken breasts with salt, black pepper, oregano, basil, and thyme.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 min on each side, or until fully cooked and golden brown.
- Remove chicken from the skillet and let it rest for a few minutes. Slice into strips.
- In the same skillet, add the remaining olive oil and minced garlic. Sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes and cook for an additional 2-3 min until softened.
- Add the cooked pasta to the skillet and toss to combine with the garlic and tomatoes.
- Serve the pasta topped with sliced chicken and sprinkle with grated Parmesan cheese and fresh parsley if desired.
Notes
- Feel free to substitute chicken with turkey or another protein if preferred.
- This dish can be made gluten-free by using gluten-free pasta.
