Italian Herb Chicken with Lemon-Garlic Spaghetti and Broccoli
A flavorful Italian-inspired dish featuring herb-marinated chicken served over lemon-garlic spaghetti, complemented by steamed broccoli for a balanced family meal.
Ingredients
- 4 chicken breasts
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 lemon (zest and juice)
- 300 grams spaghetti
- 200 grams broccoli florets
- Salt and pepper to taste
- Parmesan cheese (optional for serving)
Method
- In a bowl, mix olive oil, minced garlic, oregano, basil, lemon zest, salt, and pepper.
- Add chicken breasts to the marinade, coating them well. Let marinate for at least 15 min.
- Cook spaghetti according to package instructions in salted water. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat a little olive oil and add marinated chicken breasts. Cook for about 6-7 min on each side or until fully cooked and golden brown.
- In the same skillet, add the cooked spaghetti, lemon juice, and reserved pasta water. Toss to coat and heat through.
- Steam broccoli florets until tender, about 5 min.
- Serve the chicken on top of the spaghetti, with steamed broccoli on the side. Sprinkle with Parmesan cheese if desired.
