Herb-Seasoned Chicken with Lemon Rice and Green Beans
A flavorful and kid-friendly dish featuring herb-seasoned chicken served alongside lemon-infused rice and steamed green beans, perfect for family meals.
Ingredients
- 3 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 lemon (zest and juice)
- 1 cup long-grain rice
- 2 cups chicken broth
- 200 grams green beans, trimmed
- Salt to taste
- Fresh parsley for garnish
Method
- Preheat the oven to 200°C.
- In a bowl, mix olive oil, oregano, thyme, lemon zest, and salt. Coat the chicken breasts with this mixture.
- Place the chicken breasts in a baking dish and bake for 25 min, or until cooked through.
- While the chicken is baking, rinse the rice under cold water. In a saucepan, combine the rice, chicken broth, and lemon juice. Bring to a boil, then reduce heat to low and cover. Cook for 15 min or until the rice is tender.
- In a separate pot, bring water to a boil and steam the green beans for about 5-7 min until tender but still crisp.
- Once everything is cooked, fluff the rice and serve it with the chicken and green beans. Garnish with fresh parsley.
