Herb-Roasted Chicken with Lemon and Green Beans
A flavorful herb-roasted chicken served with a side of zesty lemon green beans and fluffy rice, perfect for a family meal.
Ingredients
- 1.5 kg whole chicken
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 200 g green beans, trimmed
- 300 g rice
Method
- Preheat the oven to 220°C.
- In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, dried thyme, dried rosemary, salt and pepper.
- Rub the mixture all over the chicken, ensuring it's well coated.
- Place the chicken in a roasting pan and roast in the preheated oven for approximately 60 min, or until the juices run clear when pierced and the internal temperature reaches 75°C.
- While the chicken is roasting, cook the rice according to package instructions.
- For the green beans, bring a pot of water to boil and blanch the trimmed beans for about 3-4 min until vibrant green and tender-crisp. Drain and set aside.
- Once the chicken is cooked, let it rest for 10 min before carving.
- Serve the chicken alongside the rice and green beans.
