Herb-Infused Lamb and Vegetable Skewers
Juicy lamb skewers marinated in fragrant herbs, grilled to perfection and served alongside a medley of seasonal vegetables for a deliciously balanced meal.
Ingredients
- 500g lamb shoulder, cut into 2-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons fresh rosemary, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Skewers (soaked in water if wooden)
Method
- In a large bowl, combine olive oil, oregano, rosemary, minced garlic, salt, and pepper.
- Add the lamb cubes to the marinade and mix well. Cover and let it marinate in the refrigerator for at least 20 min.
- While the lamb is marinating, prepare the vegetables by cutting them into the specified sizes.
- Preheat the grill or grill pan over medium-high heat.
- After marinating, thread the lamb and vegetables onto the skewers, alternating between lamb and vegetables.
- Place the skewers on the grill and cook for 10-15 min, turning occasionally, until the lamb is browned and cooked to desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
