Herb-Crusted Baked Salmon with Steamed Broccoli
A flavorful and healthy baked salmon dish topped with a herb crust, served alongside fresh steamed broccoli. This dish is free from white sauces, carrots, chips, and potatoes, making it a perfect fit for the family's preferences.
Ingredients
- 3 salmon fillets
- 1 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 1 head of broccoli, cut into florets
Method
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the breadcrumbs, parsley, dill, garlic powder, lemon zest, salt, and pepper.
- Drizzle olive oil over the mixture and stir until crumbly.
- Place the salmon fillets on a lined baking tray and squeeze lemon juice over them.
- Press the breadcrumb mixture onto the top of each salmon fillet.
- Bake in the preheated oven for 15-20 min, or until the salmon is cooked through and the crust is golden.
- While the salmon is baking, steam the broccoli florets for about 5-7 min until tender but still crisp.
- Serve the baked salmon with steamed broccoli on the side.
Notes
