Family-Friendly Chicken and Vegetable Bake

Ingredients:
4 boneless, skinless chicken breasts
2 medium carrots, sliced
1 bell pepper (any colour), chopped
1 courgette (zucchini), sliced
1 red onion, cut into wedges
300g new potatoes, halved
3 tablespoons olive oil
2 teaspoons dried mixed herbs (e.g., thyme, oregano, basil)
Salt and pepper to taste
Juice of 1 lemon
Fresh parsley, chopped (for garnish)

Steps:
1. Preheat the oven: Preheat your oven to 200°C (180°C for fan ovens) or 400°F.

2. Prepare the vegetables: In a large mixing bowl, combine the sliced carrots, chopped bell pepper, sliced courgette, red onion wedges, and halved new potatoes.

3. Season the vegetables: Drizzle the olive oil over the vegetables. Add the dried mixed herbs, salt, pepper, and lemon juice. Toss everything together until the vegetables are well coated.

4. Arrange the chicken and veggies: In a large baking dish, place the seasoned vegetables evenly on the bottom. Lay the chicken breasts on top of the vegetable mix. Drizzle a little extra olive oil over the chicken and season with salt and pepper.

5. Bake: Cover the baking dish with foil and place it in the preheated oven. Bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through (internal temperature should reach 75°C/165°F) and the vegetables are tender.

6. Serve: Once cooked, remove the baking dish from the oven and let it cool for a couple of minutes. Garnish with fresh chopped parsley before serving.

7. Enjoy: Serve warm with your favourite bread or a side salad for a complete family meal.
