Creamy Garlic Mushroom Pasta with Grilled Chicken
A delicious and hearty Italian family meal featuring creamy garlic mushroom sauce tossed with pasta and topped with grilled chicken. This dish is simple to prepare and perfect for a family dinner.
Ingredients
- 300g pasta (penne or fettuccine)
- 400g chicken breast, sliced
- 250g button mushrooms, sliced
- 3 cloves garlic, minced
- 200ml cooking cream
- 50g grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Method
- Cook the pasta according to package instructions in salted water. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Season the chicken slices with salt and pepper, then add to the pan. Cook for about 6-7 min, until golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, add the sliced mushrooms and cook until they are soft, about 5 min. Add minced garlic and cook for another minute.
- Pour in the cooking cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and combined. Season with salt and pepper to taste.
- Add the cooked pasta to the sauce and toss to combine. Serve topped with grilled chicken and garnish with fresh parsley.
