Delightful Berry Clafoutis

#### Ingredients:
– 250g mixed berries (such as blueberries, raspberries, and strawberries)
– 3 large eggs
– 50g honey or maple syrup
– 200ml almond milk (or any milk of your choice)
– 100g plain flour (wholemeal for added health)
– 1 tsp vanilla extract
– 1/2 tsp baking powder
– A pinch of salt
– Icing sugar, for dusting (optional)
#### Instructions:
1. Preheat the Oven: Preheat your oven to 180°C (160°C fan) and grease a round tart dish or a baking dish with a little butter or oil.
2. Prepare the Berries: If using strawberries, hull and slice them into smaller pieces. Rinse all the berries under cold water and gently pat them dry.
3. Make the Batter: In a mixing bowl, whisk together the eggs, honey (or maple syrup), almond milk, vanilla extract, flour, baking powder, and salt until smooth and well combined.
4. Add the Berries: Pour half of the batter into the greased dish, then scatter the mixed berries evenly over the top. Pour the remaining batter over the berries.
5. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the clafoutis rises and a skewer inserted into the centre comes out clean.
6. Cool and Dust: Allow the clafoutis to cool for a few minutes before dusting with icing sugar if desired.
7. Serve: Slice into wedges and serve warm or at room temperature. Enjoy it as a delightful dessert or a wholesome breakfast treat!
