Lemon Herb Grilled Chicken
A flavorful and healthy grilled chicken dish marinated in lemon and herbs, perfect for a family meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Method
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken.
- Seal the bag or cover the dish and refrigerate for at least 30 min, preferably up to 2 hr.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 min on each side, or until fully cooked and juices run clear.
- Let the chicken rest for a few minutes before slicing.
- Garnish with fresh parsley and serve.
