A classic Italian starter featuring toasted bread topped with a fresh tomato and basil mixture.

Ingredients

  • 1 baguette or ciabatta bread
  • 4 ripe tomatoes, diced
  • 2 cloves of garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Balsamic vinegar (optional)

Method

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette or ciabatta bread into 1/2 inch thick slices.
  3. Place the bread slices on a baking sheet and brush one side with olive oil.
  4. Toast the bread in the oven for about 5-7 minutes or until golden brown.
  5. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper.
  6. Mix well and let it sit for about 10 minutes to allow the flavors to meld.
  7. Remove the toasted bread from the oven and top each slice with the tomato mixture.
  8. Drizzle with balsamic vinegar if desired before serving.
