Bruschetta al Pomodoro
A classic Italian starter featuring toasted bread topped with a fresh tomato and basil mixture.
Ingredients
- 1 baguette or ciabatta bread
- 4 ripe tomatoes, diced
- 2 cloves of garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Balsamic vinegar (optional)
Method
- Preheat the oven to 400°F (200°C).
- Slice the baguette or ciabatta bread into 1/2 inch thick slices.
- Place the bread slices on a baking sheet and brush one side with olive oil.
- Toast the bread in the oven for about 5-7 minutes or until golden brown.
- In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper.
- Mix well and let it sit for about 10 minutes to allow the flavors to meld.
- Remove the toasted bread from the oven and top each slice with the tomato mixture.
- Drizzle with balsamic vinegar if desired before serving.
