#### Ingredients:
– 500g chicken breast, diced into bite-sized pieces
– 2 tablespoons vegetable oil
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 medium onion, sliced
– 2 cloves garlic, minced
– 1 cup pineapple chunks (fresh or canned)
– 3 tablespoons soy sauce
– 2 tablespoons rice vinegar
– 2 tablespoons ketchup
– 1 tablespoon brown sugar
– 1 teaspoon cornflour (cornstarch)
– 2 tablespoons water
– Salt and pepper, to taste
– Cooked rice or noodles, to serve
– Fresh coriander, for garnish

#### Instructions:
1. Prepare the Chicken: In a bowl, season the diced chicken with salt and pepper. Set aside for a moment to marinate slightly.

2. Make the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, cornflour, and water until smooth. This will be your sweet and sour sauce.

3. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat. Add the chicken and stir-fry for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the pan and set aside.

4. Stir-fry the Vegetables: In the same pan, add the remaining tablespoon of oil, then toss in the sliced onions, red and yellow bell peppers, and garlic. Stir-fry for about 3-4 minutes until the vegetables are just tender but still crisp.

5. Combine Everything: Add the cooked chicken back into the pan along with the pineapple chunks. Pour the sweet and sour sauce over everything and stir well to combine. Allow it to simmer for a couple of minutes so the sauce thickens slightly and heats through.
