Deliciously Easy Chocolate Mousse

#### Ingredients:
– 200g dark chocolate (at least 70% cocoa)
– 3 large eggs, separated
– 50g caster sugar
– 300ml double cream
– 1 tsp vanilla extract
– A pinch of sea salt
– Fresh raspberries and mint leaves, for garnish (optional)
#### Instructions:
1. Melt the Chocolate: Break the dark chocolate into pieces and melt it gently in a heatproof bowl set over a pan of simmering water. Stir until smooth, then remove from heat and let it cool slightly.
2. Whisk Egg Yolks: In a separate bowl, whisk the egg yolks and half of the caster sugar (25g) until pale and creamy. Stir in the melted chocolate and the vanilla extract until fully combined.
3. Beat Egg Whites: In another clean bowl, whisk the egg whites with a pinch of sea salt until soft peaks form. Gradually add the remaining 25g of caster sugar while continuing to whisk until the mixture is glossy and holds stiff peaks.
4. Whip the Cream: In another bowl, whip the double cream until it just holds its shape. Be careful not to overwhip it!
5. Combine Mixtures: Gently fold the whipped cream into the chocolate mixture in three parts, taking care not to deflate the mixture. Then, gently fold in the beaten egg whites until no visible streaks remain.
6. Chill the Mousse: Spoon the mousse into serving dishes or cups and refrigerate for at least 1.5 hours, or until set.
7. Serve: Once set, serve your delicious chocolate mousse chilled, topped with fresh raspberries and mint leaves if desired for that extra French touch!
