Lemon Herb Chicken with Garlic Rice and Steamed Carrots

Ingredients
- 5 chicken breasts
- 2 tablespoons olive oil
- 2 lemons (zest and juice)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt, to taste
- 1 cup long-grain rice
- 2 cups chicken broth
- 500 grams carrots, peeled and cut into sticks
- Fresh parsley, chopped (for garnish)
Method
- In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, and salt to create a marinade.
- Add chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 15 min.
- While the chicken is marinating, rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 18-20 min or until the rice is cooked and fluffy.
- In a separate pot, steam the carrot sticks for about 8-10 min until tender but still crisp.
- Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 min on each side or until fully cooked through.
- Fluff the cooked rice with a fork and stir in a little more minced garlic if desired.
- Serve the grilled chicken on a plate with a side of garlic rice and steamed carrots. Garnish with fresh parsley.
