Herb-Infused Chicken with Lemon and Garlic Peas

Ingredients
- 2 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon (zested and juiced)
- 2 garlic cloves (minced)
- 200 grams frozen peas
- 300 grams rice (for cooking)
- Salt and pepper to taste
Method
- Preheat the oven to 200°C.
- In a bowl, mix olive oil, dried thyme, dried rosemary, lemon zest, salt, and pepper.
- Coat the chicken breasts in the herb mixture and place them in a baking dish.
- Bake the chicken in the preheated oven for 25 min or until fully cooked.
- Meanwhile, cook the rice according to package instructions.
- In a small saucepan, bring a bit of water to a boil, then add the frozen peas and minced garlic.
- Cook for 5 min until the peas are tender, then add lemon juice and stir well.
- Once the chicken is cooked, serve it alongside the lemon garlic peas and fluffy rice.
