Herb-Infused Chicken with Lemon-Scented Rice and Steamed Broccoli
A succulent herb-infused chicken dish served with zesty lemon-scented rice and tender steamed broccoli, perfect for a family meal.
Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 lemon (zested and juiced)
- Salt and pepper to taste
- 200g long-grain rice
- 400ml chicken broth
- 200g broccoli florets
Method
- Preheat the oven to 200°C.
- In a bowl, mix olive oil, minced garlic, oregano, basil, lemon zest, lemon juice, salt, and pepper.
- Coat the chicken breasts in the herb mixture and place them in a baking dish.
- Bake the chicken for 25-30 min or until fully cooked and golden brown.
- While the chicken is baking, rinse the rice under cold water until the water runs clear.
- In a saucepan, bring the chicken broth to a boil, add the rice, and cook on low heat for about 15-18 min until the rice is tender and all the liquid is absorbed.
- Meanwhile, steam the broccoli florets for about 5-7 min or until bright green and tender.
- Serve the herb-infused chicken with the lemon-scented rice and steamed broccoli on the side.
