Herb-Infused Chicken with Roasted Bell Peppers and Spinach
A delicious Italian-inspired main course featuring tender herb-infused chicken served with a side of roasted bell peppers and sautéed spinach. This dish is flavorful and kid-friendly, perfect for a family meal.
Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 bell peppers (red and yellow), sliced
- 200 grams fresh spinach
- 1 lemon, juiced
- 50 grams grated Parmesan cheese (optional)
Method
- Preheat the oven to 200°C.
- In a bowl, mix olive oil, oregano, basil, garlic powder, salt, and pepper. Coat the chicken breasts with this mixture.
- Place the chicken breasts in a baking dish and surround with sliced bell peppers.
- Bake in the preheated oven for 25-30 min, or until the chicken is cooked through and juices run clear.
- While the chicken is baking, heat a pan over medium heat and add the fresh spinach.
- Sauté the spinach until it wilts, about 3-4 min, then squeeze lemon juice over the spinach.
- Serve the chicken with roasted bell peppers and sautéed spinach on the side. Sprinkle with Parmesan cheese if desired.
