Italian Herb Grilled Chicken with Zucchini Noodles
A light and flavorful dish featuring grilled chicken marinated in Italian herbs, served over fresh zucchini noodles for a healthy and satisfying meal.
Ingredients
- 5 boneless, skinless chicken breasts
- 2 medium zucchinis, spiralized into noodles
- 4 tablespoons olive oil
- 2 teaspoons dried Italian herbs (oregano, basil, thyme)
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 lemon, juiced and zested
- Fresh basil leaves for garnish
Method
- In a bowl, combine olive oil, dried Italian herbs, minced garlic, lemon juice, lemon zest, salt, and pepper.
- Add the chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 15 min.
- Preheat the grill over medium-high heat.
- Grill the marinated chicken for about 6-7 min on each side or until the internal temperature reaches 165°F (75°C).
- While the chicken is grilling, heat a non-stick pan over medium heat and add a splash of olive oil.
- Add the spiralized zucchini noodles to the pan and sauté for about 3-4 min until tender but still al dente. Season with salt and pepper.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
- Serve the sliced grilled chicken over a bed of zucchini noodles, garnished with fresh basil leaves.

- Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
