Italian Herb Grilled Chicken with Zucchini and Bell Peppers
A flavorful and healthy Italian-inspired grilled chicken served with sautéed zucchini and bell peppers, perfect for the whole family.
Ingredients
- 3 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 tablespoon balsamic vinegar
- Fresh basil leaves for garnish
Method
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, Italian seasoning, garlic powder, salt, and pepper.
- Coat the chicken breasts with the olive oil mixture.
- Place the chicken on the grill and cook for about 6-7 min on each side, or until fully cooked and no longer pink in the center.
- While the chicken is grilling, heat a skillet over medium heat.
- Add the sliced zucchini and bell peppers to the skillet.
- Sauté the vegetables for about 5-7 min, until tender.
- Drizzle balsamic vinegar over the vegetables and toss to combine.
- Once the chicken is done, remove it from the grill and let it rest for a few minutes.
- Slice the chicken and serve it with the sautéed vegetables on the side.
- Garnish with fresh basil leaves before serving.
Notes
- You can add other vegetables according to your preference.
- Ensure the chicken is cooked to an internal temperature of 165°F.
