Vegetable Stir-fry with Tofu
A colorful and nutritious vegetable stir-fry featuring marinated tofu, perfect for a family meal.
Ingredients
- 1 block firm tofu, drained and pressed
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Method
- Cut the pressed tofu into cubes and marinate in soy sauce for 10 min.
- In a large pan or wok, heat vegetable oil over medium-high heat.
- Add minced garlic and ginger to the pan, sauté for 30 seconds until fragrant.
- Add marinated tofu to the pan, cooking until golden brown on all sides, about 5-7 min.
- Remove tofu and set aside.
- In the same pan, add sesame oil and all vegetables. Stir-fry for about 5-7 min or until tender-crisp.
- Return the tofu to the pan, season with salt and pepper, and toss everything together for another 2 min.
- Serve hot over cooked rice or noodles.
Notes
- Feel free to substitute any vegetables based on preference or availability.
- For added flavor, sprinkle with sesame seeds before serving.
