Vegetable Stir-Fry with Tofu
A delicious and colorful vegetable stir-fry paired with tofu, perfect for a healthy family meal.
Ingredients
- 14 oz firm tofu, drained and pressed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, chopped
- Sesame seeds for garnish
Method
- Cut the pressed tofu into bite-sized cubes.
- In a bowl, toss the tofu with soy sauce and let it marinate for 5 min.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add the marinated tofu and cook until golden brown, about 5-7 min. Remove and set aside.
- In the same skillet, add garlic and ginger, sauté for 30 seconds until fragrant.
- Add bell pepper, zucchini, broccoli, and snap peas. Stir-fry for about 5-7 min until vegetables are tender yet crisp.
- Return the tofu to the skillet, mixing well with the vegetables. Cook for another 2-3 min.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- You can substitute any vegetables based on your preference.
- Serve over cooked rice or noodles if desired.
