British Vegetable Soup

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 2 zucchini, chopped
- 1 cup green beans, trimmed and chopped
- 1 cup peas (fresh or frozen)
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- Fresh bread for serving
Method
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and celery, sautéing until they are soft.
- Add the bell pepper, zucchini, and green beans, cooking for an additional 5 min.
- Pour in the vegetable broth and bring to a boil.
- Stir in the peas, thyme, and parsley, then reduce heat and let simmer for about 20 min.
- Season with salt and pepper to taste.
